Sweet Potato Brûlée
Sweetened-up cool custards make a very special treat. AllWhites® and fat-free half and half create a decadent dessert with only 1 gram of fat!

Serves: 6 servings

Ingredients:

  • 1 cup Simply Potatoes® Mashed Sweet Potatoes
  • 1 cup fat-free half and half
  • 1 cup (8 oz.) AllWhites®*
  • 1/3 cup brown sugar
  • 6 teaspoons sugar

Instructions:

Heat oven to 300°F. Butter six 6-ounce custard cups or ramekins; set cups in 13x9-inch glass baking dish.

In large bowl whisk together Simply Potatoes®, fat-free half and half, AllWhites and brown sugar until sugar is dissolved. Pour mixture through strainer to remove larger sweet potato particulates. Pour mixture into prepared custard cups.

Place baking dish in oven; fill dish with warm water two-thirds the way up the sides of custard cups, careful not to splash water into custard cups. Bake 40 to 45 minutes or until custard is almost set in center**.

Cool custard to room temperature; remove from water bath. Cover each custard cup; chill for at least 2 hours.

Heat broiler on HIGH. Place oven rack 4 to 6 inches away from heat. Sprinkle top of each custard with 1 teaspoon of sugar. Place cups on large baking sheet. Broil 2 to 4 minutes, watching carefully, until sugar melts and starts to caramelize.

Refrigerate brûlée for at least 30 minutes. Serve within 3 hours.

* Better’n Eggs® can be used as a substitute for AllWhites.

** Baking times vary depending on type of custard cups and heat of water bath. Check brûlée at minimum baking time; bake longer if necessary.
