Ingredients:

4 or 5 medium russet potatoes*, cut lengthwise into 8 wedges

1 tablespoon cornstarch

1/3 cup AllWhites® egg whites
-
1 clove garlic, finely chopped

Hot pepper sauce to taste
-
1/2 teaspoon dried thyme
-
Coarse salt and freshly ground pepper to taste

Malt vinegar (optional)
Instructions:
- Heat oven to 450°F. Line a large rimmed baking sheet with parchment. Toss potatoes with cornstarch until coated.
- Whisk AllWhites egg whites in medium bowl with garlic and hot pepper sauce. Add the potatoes; toss with hands to coat in egg white mixture.
- Lift potatoes onto prepared baking sheet. Sprinkle with thyme, salt and pepper; spray with cooking spray. Bake 20 to 25 minutes or until golden and tender, turning once or twice. Serve sprinkled with vinegar.
Tips & Substitutions:
*Substitute 1 package (20 ounces) Simply Potatoes® Rosemary Garlic Red Potato Wedges or small sweet potatoes.
Make flavored ketchup to serve with fries. - To make a chili ketchup, blend 1 cup ketchup, 1 tablespoon chili powder, 1 teaspoon smoked paprika, and a splash of hot pepper sauce.
- For a raspberry balsamic ketchup, blend 1 cup ketchup with ¼ cup seedless raspberry jam and 2 tablespoons balsamic vinegar.
