Ham and Cheese Breakfast Panini
Use a Panini grill or indoor countertop grill to make these hearty sandwiches. These sandwiches are great for breakfast, lunch or dinner.
Preparation: 15 minutes  
Time-To-Table: 25 minutes  
Serves: 4

Ingredients:

  • 8 slices Italian bread, 1/2 inch thick*
  • 1 cup (8 oz.) Better'n Eggs®
  • 1/4 cup mayonnaise
  • 1 tablespoon chopped fresh basil or 1 teaspoon dried
  • 4 ounces thinly sliced ham
  • 4 ounces thinly sliced Colby or Cheddar cheese
  • 1 small tomato

Instructions:

1. Heat grill to medium heat. Spray small nonstick skillet with nonstick cooking spray. Cook Better'n Eggs in 10-inch nonstick skillet over medium heat. As Better'n Eggs start to set, use spatula to lift edge of cooked Better'n Eggs letting uncooked Better'n Eggs flow to bottom of skillet. Cook until Better'n Eggs are set but still moist. Cut into 4 pieces.

2. Meanwhile, in small bowl, stir together mayonnaise and basil. Spread 1 side of each slice of bread with mayonnaise mixture. On four slices of bread place 1/4 of egg, 1/4 of ham, 1/4 of cheese and 1/4 of tomato. Top with remaining bread slices.

3. Place two assembled sandwiches at a time inside grill**. Grill until bread is golden brown and cheese melts, pressing down on grill occasionally to reinforce grill marks. Repeat with remaining sandwiches***.


Tips & Substitutions:

* Ciabatta bread is a great alternative to try. Ciabatta can be bought at the bakery in loaves or individual squares. Slice in half lengthwise and assemble sandwiches as directed above.

** Watch temperature of grill closely. If grill is too hot the bread may burn. If the grill is too cool, the grill marks will be faint.

*** Don't have a grill? These sandwiches can be cooked in a skillet similar to a grilled cheese.
