Broccoli, Tomato and Basil Frittata
This healthy dish is full of veggies. Fresh basil will add lots of flavor, but you can use dried if you don't have fresh on hand.

Instructions:1. In small bowl stir together Better'n Eggs, milk and parmesan cheese; set aside. Heat oil on medium-high in 10-inch nonstick skillet; add onions. Cook until onions are crisp tender (4 to 5 minutes). Add tomato, broccoli, mushrooms, basil and salt. Continue cooking until broccoli is crisp tender (5 to 8 minutes).2. Reduce heat to medium-low. Pour Better'n Eggs mixture over vegetables. Cover; cook until Better'n Eggs are almost set (8 to 10 minutes). Remove from heat. 3.
