Savory sausage, fresh spinach and basil, luscious grape tomatoes and two cheeses create a satisfying medley of delightful flavors in this easy brunch recipe. Prep in 20 minutes. Refrigerate 8 hours or overnight.


  • 1 lb.
    ground Italian sausage
  • 1/2 lb.
    French bread, cut into 1-in cubes (about 5 cups)
  • 2 cup
    firmly packed fresh spinach, coarsely chopped
  • 1 cup
    grape tomatoes, cut in half crosswise
  • 1 Tbsp.
    chopped fresh basil
  • 2 cups (16 oz.)
    Better'n Eggs®
  • 2 cups
  • 1/2 tsp.
  • 1/2 cup
    Crystal Farms® Shredded Parmesan Cheese
  • 1 cup
    Crystal Farms® Shredded Mozzarella Cheese


  • Cook Italian sausage in 10-inch skillet until browned. Drain grease if needed.

  • Spray 3-quart oval or rectangular baking dish with nonstick cooking spray. Combine cooked sausage, bread cubes, spinach, tomatoes and basil in baking dish.

  • In medium bowl combine Better'n Eggs, milk and salt; mix well. Pour over bread mixture. Top with Parmesan and Mozzarella cheese. Cover and refrigerate 8 hours or overnight.

  • Heat oven to 350°F. Uncover, bake for 50 to 60 minutes or until center is set. If necessary cover with foil if top of casserole starts to brown before baking is complete.
