Heat 1 tablespoon oil in large skillet over medium heat. Add onions; season with herbs and salt and pepper. Cook onions, stirring frequently, about 20 minutes or until golden brown. Remove from skillet to bowl.

Meanwhile, pour AllWhites egg whites into a shallow dish. Place flax meal in a second shallow dish; generously season with salt and pepper. Dip chicken into eggs, then dredge in flax meal.

Heat remaining 2 tablespoons oil in skillet over medium heat. Add chicken. Cook 10 to 12 minutes, turning once, until golden brown and no longer pink in center.
