Cook up a quick, hearty breakfast with sliced potatoes, crisp, bell peppers and new Better'n Eggs® Ham & Cheese.

1 pkg. (16 oz) Better'n Eggs®

1/4 cup skim milk

2 Tbsp. olive oil

1/2 cup thinly sliced onions

1/2 (about 1/2 cup) green bell pepper, cut into thin strips (about 1/2 cup)

2 cups Simply Potatoes® Homestyle Slices

1 cup (about 5 oz.) diced, fully cooked ham
-
1/4 tsp. dried thyme leaves
-
1/4 tsp. seasoned salt
-
1/2 cup finely shredded sharp cheddar cheese
Instructions

In small bowl stir together Better'n Eggs Ham & Cheese and milk; set aside.

In 12-inch non-stick skillet heat oil over medium-high heat. Add Simply Potatoes®, green pepper, thyme and salt. Spread potatoes into thin layer. Cook 5 to 6 minutes or until potatoes begin to brown. Flip potatoes and cook 4 to 5 minutes or until tender. Spread potatoes nto thin layer to cover bottom of skillet.

Reduce heat to medium-low. Pour Better'n Eggs mixture over vegetables. Cover; cook for 6 to 8 minutes or until Better'n Eggs are set but still moist.
