Light cream cheese and Better'n Eggs® eliminate some of the fat from this favorite dessert. Luscious berries and sweet jam add the finishing touch.
1 1/4 cupsgraham cracker crumbs
1/3 cupbutter or margarine, melted
- 2 pkg. (8 oz. each)1/3 less fat cream cheese, softened
- 1/2 cupsugar
- 1/2 cup (4 oz.)Better'n Eggs®
- 1 tsp.almond extract
- 1/2 tsp.vanilla
- 1/2 cupstrawberry jam
- 1 1/2 cupssliced strawberries*
Heat oven to 350°F. Spray 9-inch glass pie plate with nonstick cooking spray. In medium bowl combine all crust ingredients; mix well. Press onto bottom and sides of pie plate; set aside.
Combine all cheesecake ingredients in large bowl. Beat until smooth. Pour mixture into crust. Bake for 25 to 30 minutes or just until cheesecake is set. Cool slightly (about 30 minutes).
In 1-quart saucepan heat jam until melted. Stir in strawberries. Spread strawberries in thin layer over cheesecake. Refrigerate at least 1 hour or until set.
* Or use 1 1/2 cups of your favorite berries like a combination of fresh raspberries and sliced strawberries.
