A meat-free spin on a Mexican classic. Seasoned egg whites sautéed with mushrooms and onions and topped with all the fixin's -- where's the beef? Who cares.
- 2 cups
2 tbsptaco seasoning or Mexican seasoning
1/2 cupchopped onions
1 cupchopped mushrooms
- 2taco shells or tortillas
optional salt, pepper, garlic powder, hot sauce
optional toppings: lettuce, cheese, avocado, sour cream, salsa
Pre-heat pan with 1 tbsp olive oil. Add onions and cook until translucent. Add chopped mushrooms. Season with garlic powder, salt and pepper. Cook till soft.
Mix 2 cups egg whites and taco seasoning in a bowl. Add to pan with onions and mushrooms. Season with salt and pepper to taste. Cook through.
Serve in taco shells and top with your favorite taco toppings. Enjoy!
