This delicious turkey meatloaf recipe will fill your kitchen with the wonderful aroma of apples, onions, raisins and curry baking in the oven.
Ingredients

1/4 cup (2 oz.)Better'n Eggs® *

20 oz. (1 pkg.)lean ground turkey**

2/3 cupplain bread crumbs, ground

1/2 cuponion, finely chopped

1/2 cupGranny Smith apple, peeled, cored and finely chopped

1/4 cupraisins
-
2 Tbsp.almonds, sliced

2 tsp.curry powder
-
1/2 tsp.salt
-
1/4 tsp.ground pepper

1/2 cupketchup
-
1/2 tsp.lemon peel, freshly grated
- Mango chutney, if desired
Instructions

In large bowl, combine all ingredients; mix well, using hands if necessary. Form into 6 (4x2-inch) loaves. Cover; refrigerate until ready to bake***.

Heat oven to 350°F. Line 15x10x1-inch baking pan with aluminum foil. Spray with nonstick cooking spray. Place meatloaves 2 inches apart on foil. Bake 30 to 35 minutes or until meat reaches an internal temperature of 160°F. Serve with chutney.

** Extra lean ground turkey is not recommended. Extra lean meat causes meatloaf to be overly dry.
