This delicious turkey meatloaf recipe will fill your kitchen with the wonderful aroma of apples, onions, raisins and curry baking in the oven.

Ingredients

  • 1/4 cup (2 oz.)
    Better'n Eggs® *
  • 20 oz. (1 pkg.)
    lean ground turkey**
  • 2/3 cup
    plain bread crumbs, ground
  • 1/2 cup
    onion, finely chopped
  • 1/2 cup
    Granny Smith apple, peeled, cored and finely chopped
  • 1/4 cup
    raisins
  • 2 Tbsp.
    almonds, sliced
  • 2 tsp.
    curry powder
  • 1/2 tsp.
    salt
  • 1/4 tsp.
    ground pepper
  • 1/2 cup
    ketchup
  • 1/2 tsp.
    lemon peel, freshly grated
  • Mango chutney, if desired

Instructions

  • In large bowl, combine all ingredients; mix well, using hands if necessary. Form into 6 (4x2-inch) loaves. Cover; refrigerate until ready to bake***.

  • Heat oven to 350°F. Line 15x10x1-inch baking pan with aluminum foil. Spray with nonstick cooking spray. Place meatloaves 2 inches apart on foil. Bake 30 to 35 minutes or until meat reaches an internal temperature of 160°F. Serve with chutney.

  • * If desired substitute ¼ cup AllWhites®

    ** Extra lean ground turkey is not recommended. Extra lean meat causes meatloaf to be overly dry.

    *** Meatloaves can be baked immediately after preparing. Follow baking steps as directed.
