High-protein and delicious with the mild, smoky flavor of salmon and fresh chives.

Ingredients

  • 2 Tbsp.
    butter or margarine
  • 2 cup (16 oz.)
    AllWhites® egg whites
  • 1 pkg. (4 to 4 1/2 oz.)
    smoked salmon; skin removed; cut into bite size pieces
  • 2 oz.
    Crystal Farms® Cream Cheese; softened; cut into pieces
  • 1 Tbsp.
    chopped fresh chives

Instructions

  • Melt 1 tablespoon butter in 10-inch nonstick skillet over medium heat. Add 1 cup Better'n Eggs. As it starts to set use spatula to lift edge of cooked Better'n Eggs letting uncooked Better'n Eggs flow to bottom of skillet. Cook until Better'n Eggs are set but still moist.

  • Top with ½ of each filling ingredient (salmon, cream cheese and chives). Fold omelet in half. Invert onto plate.

  • Repeat above with remaining ingredients. Cut each omelet in half; serve.
