This healthy dish is full of veggies. Fresh basil will add lots of flavor, but you can use dried if you don't have fresh on hand.

Ingredients

  • 1 cup (8 oz.)
    Better'n Eggs®
  • 3 Tbsp.
    milk
  • 3 Tbsp.
    grated Crystal Farms® Parmesan Cheese
  • 3 Tbsp.
    olive oil
  • 1 (1 cup)
    medium onion chopped
  • 3
    medium tomatoes, seeded, chopped
  • 1 cup
    broccoli, chopped
  • 1/2 cup
    sliced mushrooms
  • 1 Tbsp.
    chopped fresh basil or 1 tsp.dried basil
  • 1/2 tsp.
    salt
  • 1 cup
    Crystal Farms® shredded Mozzarella cheese

Instructions

  • In small bowl stir together Better'n Eggs, milk and parmesan cheese; set aside. Heat oil on medium-high in 10-inch nonstick skillet; add onions. Cook until onions are crisp tender (4 to 5 minutes). Add tomato, broccoli, mushrooms, basil and salt. Continue cooking until broccoli is crisp tender (5 to 8 minutes).

  • Reduce heat to medium-low. Pour Better'n Eggs mixture over vegetables. Cover; cook until Better'n Eggs are almost set (8 to 10 minutes). Remove from heat.

  • Sprinkle with cheese; cover and let stand until cheese is melted (3 to 4 minutes.)
