Better'n Eggs® Recipe,

Cook up this satisfying, healthy frittata for any meal of the day.

Time-To-Table: 25 minutes  
Serving Size: 4

Ingredients:

  • 1 package (16 ounces) Better’n Eggs®
  • 1/4 cup skim milk
  • 2 tablespoons olive oil
  • 1/2 cup thinly sliced onions
  • 1/2 green bell pepper, cut into thin strips (about 1/2 cup)
  • 2 cups Simply Potatoes® Homestyle Slices
  • 1 cup (about 5 ounces) diced, fully cooked ham
  • 1/4 teaspoon dried thyme leaves
  • 1/4 teaspoon seasoned salt
  • 1/2 cup finely shredded sharp cheddar cheese

Instructions:
    1. In small bowl stir together Better’n Eggs and milk; set aside.

    2. In 12-inch nonstick skillet heat oil over medium-high heat. Add onions and green pepper. Cook, stirring occasionally about 2 minutes, until onions are soft. Add Simply Potatoes® and ham. Cook 8 to 10 minutes, turning potatoes occasionally, until potatoes are tender and brown. Spread mixture into thin layer to cover bottom of skillet. Sprinkle with thyme leaves and seasoned salt.

    3. Reduce heat to medium-low. Pour egg mixture evenly into skillet. Cover; cook for 6 to 8 minutes or until eggs are set but still moist. Uncover; sprinkle with cheese. Cook 1 to 2 minutes until cheese is melted.
