Middle Eastern Kefta Kabobs
Aromatic spices and fresh herbs mixed with ground turkey or chicken make these kabobs so flavorful! Cooked on the grill or under the broiler they're delicious served on warm pita bread with creamy yogurt sauce.

Ingredients:

  • 1 pound lean ground chicken or turkey
  • 1/4 cup AllWhites® egg whites
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped fresh flat-leaf parsley
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon salt
  • 3/4 teaspoon pumpkin pie spice
  • 1/4 teaspoon cayenne pepper or to taste

Instructions:

  1. Heat grill to medium-high heat or broiler to high. Mix all ingredients in medium bowl until well blended. Using wet hands, shape mixture into 2-inch balls, then roll them into a sausage shape; press around flat bamboo skewers.
  2. Cook kabobs on grill or under broiler for 6 to 8 minutes, turning once, until no longer pink in center (internal temperature should be 165°F).


Tips & Substitutions:

Serve with warm pita bread and a creamy sauce of plain Greek yogurt mixed with a shake of garlic salt, chopped fresh cucumber and mint, and a bit of grated lemon peel.

Pumpkin pie spice is a blend of sweet spices that are often used in Middle Eastern meat dishes: cinnamon, ginger, cloves, and nutmeg. If you’d prefer to use separate spices, substitute ¼ teaspoon cinnamon and ginger, plus ¼ teaspoon ground cumin.
