Liven up traditional cornbread with chopped green chilies, Mexican cheese and crunchy corn.

Ingredients

  • 1 1/4 cup
    cornmeal
  • 1 cup
    all-purpose flour
  • 3/4 cup
    Crystal Farms® Shredded Mexican 3 Cheese*
  • 1/3 cup
    sugar
  • 1 Tbsp.
    baking powder
  • 1/4 tsp.
    salt
  • 1 cup
    milk
  • 1/3 cup
    butter or margarine, melted
  • 1/4 cup (2 oz.)
    Better'n Eggs®
  • 11 oz. (1 can)
    corn nibblets, well drained
  • 4 oz. (1 can)
    chopped green chilies

Instructions

  • Heat oven to 350°F. Combine cornmeal, flour, cheese, sugar, baking powder and salt in large bowl; mix well. Add milk, melted butter and Better'n Eggs. Stir just until moistened. Add corn and green chilies; stir just until mixed.

  • Spread into greased 9-inch square baking pan. Bake for 25 to 30 minutes or until edges are lightly browned and toothpick inserted in center comes out clean.
