This healthy dish is full of veggies. Fresh basil will add lots of flavor, but you can use dried if you don't have fresh on hand.

1 cup (8 oz.)Better'n Eggs®

3 Tbsp.milk

3 Tbsp.grated Crystal Farms® Parmesan Cheese

3 Tbsp.olive oil

1 (1 cup)medium onion chopped

3 medium tomatoes, seeded, chopped

1 cupbroccoli, chopped

1/2 cupsliced mushrooms

1 Tbsp.chopped fresh basil or 1 tsp.dried basil

1/2 tsp.salt

1 cupCrystal Farms® shredded Mozzarella cheese
Instructions

In small bowl stir together Better'n Eggs, milk and parmesan cheese; set aside. Heat oil on medium-high in 10-inch nonstick skillet; add onions. Cook until onions are crisp tender (4 to 5 minutes). Add tomato, broccoli, mushrooms, basil and salt. Continue cooking until broccoli is crisp tender (5 to 8 minutes).

Reduce heat to medium-low. Pour Better'n Eggs mixture over vegetables. Cover; cook until Better'n Eggs are almost set (8 to 10 minutes). Remove from heat.

Sprinkle with cheese; cover and let stand until cheese is melted (3 to 4 minutes.)
